Mulberry Cobbler (with a side of Childhood)

In case you haven't heard, summer is my favorite time of year. It's been that way since childhood - probably because I had a pretty great childhood.

Once school got out for the summer, I was free to be a farm kid. My best friend, Annette, luckily lived across the road from me and she and I practically lived at each others' houses.

We spent the summer swimming in the stock tank (that's the farm kid version of a swimming pool), rescuing baby bunnies and kittens, rearranging the bales in the hayloft to make forts and mazes.

My brother and I played in the wheat trucks during harvest and my parents taught taught us to work by picking and selling sweet corn. I helped my mom make lunches and helped Annette's mom make homemade ice cream sandwiches.

One of my sweetest childhood memories is picking mulberries off the tree in Annette's backyard. We were constantly barefoot (like any good farm kid), so it was easy to tell where we'd been - we'd show back up to the house with stained hands, mouths, and feet.

Guest Blog! Buffalo Chickpea Salad

My favorite memories with my friend Ann Scheufler have always involved food. It’s not to say that we haven’t had great experiences traveling, hiking, singing, and just living together, but the best times have always been in the kitchen.

Fast forward to when I met my husband Jason, who (as luck would have it) is a vegetarian! After three years of marriage we have found a happy compromise when it comes to food. While I cook mainly vegetarian fare, there are certain foods I crave, and buffalo wings are definitely one of them. Thus, with a little creativity in the kitchen, Buffalo Chickpea Salad was born.

Red, White, and Blue Cheese Salad

Happy Fourth of July, ya'll! I'm spending this Fourth at one of my favorite places: back home on the farm. It's been a great weekend.

If you, too, are enjoying time with your family - and perhaps a few tasty holiday favorites? - maybe you'd like an idea for a healthy, delicious side to take to your gathering. In the spirit of the holiday, I thought a red, white, and blue combo might be fun. In the spirit of health, I thought I'd introduce you to one of my favorite root veggies: beets.

Strawberry Rhubarb Crisp

Sometimes, I love me some good 'ole American Fried Chicken.

Homemade mashed potatoes and gravy (definitely not from a box), cucumbers in vinegar, lettuce salad, and hand-breaded, pan-fried chicken.

That was last weekend's menu when I shared dinner with friends. I had elected to bring the dessert, so I chose to bring the only thing I could think of that would be worthy to stand next to that golden-crusted poultry from Heaven: Strawberry Rhubarb Crisp.

Brown Rice Bowls with Roasted Carrots and Broccoli

This is a post about veggies & friendship.

When I was in college, I met some of the best friends of my life. Work, distance, and families keep us from staying in frequent contact, but every year since we graduated we've managed to take a weekend for an annual girls' trip.

We haven't embarked on any extravagant vacations (because half of us have been in grad school and are thus quite poor), but it never really matters where we are. It's all about community, laughter, and (of course) great food.
