3-Step Roasted Vegetables

“I don’t like vegetables.”

It’s a phrase I commonly hear which breaks my heart. Yes, I’m emotional about your eating habits.

I’m a firm believer of fueling your body with quality food. I also feel strongly you should love what you eat! So today I’ll first convince you why you should love veggies, and then I’ll show you how to love them.

Dairy-Free Piña Colada Fruit Dip

I love summer. I love the long evenings, sitting on a patio with friends, hikes in sunny mountains, and the freedom to leave my house without grabbing a jacket.

There are certain foods that define summer for me: watermelon, gin & tonic, cucumber-tomato salad, grilled burgers, and homemade ice cream, to name a few. This week at girls' night, Paige introduced me to a new summertime favorite, which we dubbed Piña Colada Fruit Dip.

Strawberry Mango Spinach Salad

This day calls for a dish as bright as my own mother. Something healthy, sweet, and simply beautiful. Something fresh and wholesome. And what could be better on a beautiful spring Mother's Day but a crisp, colorful salad?

While the word "salad" often conjures up visions of dreary pieces of rabbit food covered in white sauce (sometimes called "dressing") this need not be so. Choose the right type of greens for your dish and add a few complimentary ingredients and you'll have a healthy side (or main!) that has everybody coming back for seconds!

Guiltless Spinach and Artichoke Dip

Spinach and Artichoke Dip is ooey-gooey goodness. It is salty, savory, and creamy. And, as it turns out, it's kind of terrible for you.

That's right: despite two of the most awesome vegetables being highlighted in the title, this dip is traditionally significantly less than healthy. Thus, because I love both Spin Dip and eating healthy, I did what I usually do (see: semi-healthy pizza post) and made a few adjustments to make this dish a little less bad for you.

Super Food Fall Salad

It's officially fall! I love changing seasons. The crisp smell of the cool autumn air, fiery reds, yellow and oranges dancing in the trees, sweaters and hot tea.

As I'm writing this, I'm drinking a Pumpkin Spice Latte Nitro Stout brewed by Breckenridge Brewery. And yes, it's as good as it sounds.

We're in the sweet spot of fall where summer produce is still hanging on, but the fall seasonal veggies are just beginning to appear. And so, in homage to autumn, I want to introduce you to my new favorite fall salad featuring some foods that are so amazing, they truly deserve the title "Superfood."

Guest Blog! Buffalo Chickpea Salad

My favorite memories with my friend Ann Scheufler have always involved food. It’s not to say that we haven’t had great experiences traveling, hiking, singing, and just living together, but the best times have always been in the kitchen.

Fast forward to when I met my husband Jason, who (as luck would have it) is a vegetarian! After three years of marriage we have found a happy compromise when it comes to food. While I cook mainly vegetarian fare, there are certain foods I crave, and buffalo wings are definitely one of them. Thus, with a little creativity in the kitchen, Buffalo Chickpea Salad was born.

Red, White, and Blue Cheese Salad

Happy Fourth of July, ya'll! I'm spending this Fourth at one of my favorite places: back home on the farm. It's been a great weekend.

If you, too, are enjoying time with your family - and perhaps a few tasty holiday favorites? - maybe you'd like an idea for a healthy, delicious side to take to your gathering. In the spirit of the holiday, I thought a red, white, and blue combo might be fun. In the spirit of health, I thought I'd introduce you to one of my favorite root veggies: beets.

Roasted Asparagus

Spring is here! It's that glorious time of year that brings erratic weather, pink blossoms on trees, and lawns with gradually deepening shades of green. But of course, my favorite thing about spring is the vegetables that start to grow.

Among my favorite spring vegetables is asparagus. Have you noticed that it's been on sale at the grocery store lately? That means it's in season!

Crowd-Pleasing Roasted Broccoli

You are what you eat.

I've said this a lot in the last few weeks. I've been thinking about it a lot. How important it is to put quality food in our bodies if we want to have quality health

I also think that it's very important to love what you eat. Unfortunately, for the majority of people I talk to (or at least, so it seems), the idea of healthy and delicious seem mutually exclusive.

I'm here to attempt to convince you otherwise.

So, today we're roasting broccoli. Yes, that's right. If Brussels sprouts are the #1 most disliked vegetable in America, broccoli is probably #2.

If you fall into the category of people-who-hate-broccoli, here are three reasons with which I hope to change your mind.

Easy (and Delicious) Sautéed Brussels Sprouts

If the very words "Brussels sprouts" had you wrinkling your nose and tempted you to avoid reading further, this message is for you.
