Gluten-Free Pumpkin Bars

While in search of a different, delicious breakfast one morning this fall, I accidentally created a new breakfast bar recipe. And because it's fall - and because I'm a white middle class millennial woman - this means it includes pumpkin.

Pumpkin happens to lend itself as a great way to sneak a vegetable into breakfast. And I love breakfast. But not everybody (or every diet fad) does…

Easy Coconut Cranberry Granola

January is a weird month. It's the I-know-I-need-to-get-back-on-track month, but also the I'm-still-craving-all-things-sugar. What a bother.

So today instead of a lesson about nutrition I'm going to simply remind you to fuel your body with quality food that you love. Remind you to seek Balance, forgive yourself for Off-Days, be Thankful, and pursue your Personal Records.

Next I'm going to give you an easy, healthy, and yummy treat for your breakfasts this week - because I think Breakfast is the Best Meal of the Day and I hope you learn to love it as much as me!

Ooey-Gooey Sourdough Cinnamon Rolls

Today is the day.

I've been perfecting this recipe over the last six months or so, delivering the case studies to various (very happy) taste testers. It's taken me a while to overcome the sticker shock of "oh-dear-lord-there's-so-much-sugar," but I've succumbed to the fact this is a soul food recipe rather than try to make it unnecessarily healthy-ish.

So today - finally - is the day: Merv the sourdough starter turns into decadent, melt-in-your-mouth, Ooey-Gooey Sourdough Cinnamon Rolls.

Savory Oatmeal

It snowed this week for the first time this season! And of course, as the weather gets colder, my breakfasts heat up.

Last year around this time, I introduced you to Pumpkin Steel-Cut Oats. This year I'm changing up this long-time breakfast favorite and rather than sweet oatmeal (as we're accustomed to here in the 'States), I'm challenging you to think outside the box and try this porridge as a savory dish.

Savory Granola Bars

One of the best things about living in Colorado is that the mountains are (for all intents and purposes) in my backyard. For a girl who grew up in Kansas, I still can't get over this fact.

Three days a week I drive west on my commute home and I gaze upon the splendor of the Rockies. Whether snow-peaked, green, or grey, they never cease to capture my imagination or my heart.

I love the mountains.

As a result of my need for salt + convenience + delicious + healthy food for the trail, I pursued a quest to develop savory granola bars. That's right. Not blocks of sugar, but blocks of nutrition.

Pumpkin Porridge

Baby, it's cold outside! With almost a foot of snow outside, all I really want to do is to curl up on the couch with a good book and cup of hot tea.

Unfortunately, working full-time puts a bit of a damper on those plans during the week. So what's the next best thing to staying in? Starting my day with a delicious, wholesome bowl of hot cereal. Yes, that's right: oatmeal.

Pumpkin Spice Granola

Fall is in the air. Which, as I'm told by Starbucks®, means pumpkin everything.

Apart from the accompanying sugar that is often found in these "pumpkin everythings" (be very careful about those lattes), I rather like pumpkin.

Pure pumpkin contains so many good things. It's probably fall's best-kept-secret. It's low in calories, high in fiber, and has a ton of vitamins and minerals. But one of my favorite things about pumpkin is noticeable at just a glance.
