Gluten-Free Pumpkin Bars

While in search of a different, delicious breakfast one morning this fall, I accidentally created a new breakfast bar recipe. And because it's fall - and because I'm a white middle class millennial woman - this means it includes pumpkin.

Pumpkin happens to lend itself as a great way to sneak a vegetable into breakfast. And I love breakfast. But not everybody (or every diet fad) does…

Mulberry Cobbler (with a side of Childhood)

In case you haven't heard, summer is my favorite time of year. It's been that way since childhood - probably because I had a pretty great childhood.

Once school got out for the summer, I was free to be a farm kid. My best friend, Annette, luckily lived across the road from me and she and I practically lived at each others' houses.

We spent the summer swimming in the stock tank (that's the farm kid version of a swimming pool), rescuing baby bunnies and kittens, rearranging the bales in the hayloft to make forts and mazes.

My brother and I played in the wheat trucks during harvest and my parents taught taught us to work by picking and selling sweet corn. I helped my mom make lunches and helped Annette's mom make homemade ice cream sandwiches.

One of my sweetest childhood memories is picking mulberries off the tree in Annette's backyard. We were constantly barefoot (like any good farm kid), so it was easy to tell where we'd been - we'd show back up to the house with stained hands, mouths, and feet.

Easy Coconut Cranberry Granola

January is a weird month. It's the I-know-I-need-to-get-back-on-track month, but also the I'm-still-craving-all-things-sugar. What a bother.

So today instead of a lesson about nutrition I'm going to simply remind you to fuel your body with quality food that you love. Remind you to seek Balance, forgive yourself for Off-Days, be Thankful, and pursue your Personal Records.

Next I'm going to give you an easy, healthy, and yummy treat for your breakfasts this week - because I think Breakfast is the Best Meal of the Day and I hope you learn to love it as much as me!

Ooey-Gooey Sourdough Cinnamon Rolls

Today is the day.

I've been perfecting this recipe over the last six months or so, delivering the case studies to various (very happy) taste testers. It's taken me a while to overcome the sticker shock of "oh-dear-lord-there's-so-much-sugar," but I've succumbed to the fact this is a soul food recipe rather than try to make it unnecessarily healthy-ish.

So today - finally - is the day: Merv the sourdough starter turns into decadent, melt-in-your-mouth, Ooey-Gooey Sourdough Cinnamon Rolls.

Dairy-Free Piña Colada Fruit Dip

I love summer. I love the long evenings, sitting on a patio with friends, hikes in sunny mountains, and the freedom to leave my house without grabbing a jacket.

There are certain foods that define summer for me: watermelon, gin & tonic, cucumber-tomato salad, grilled burgers, and homemade ice cream, to name a few. This week at girls' night, Paige introduced me to a new summertime favorite, which we dubbed Piña Colada Fruit Dip.

Strawberry Rhubarb Crisp

Sometimes, I love me some good 'ole American Fried Chicken.

Homemade mashed potatoes and gravy (definitely not from a box), cucumbers in vinegar, lettuce salad, and hand-breaded, pan-fried chicken.

That was last weekend's menu when I shared dinner with friends. I had elected to bring the dessert, so I chose to bring the only thing I could think of that would be worthy to stand next to that golden-crusted poultry from Heaven: Strawberry Rhubarb Crisp.
